Pumpkin seeds pack therapeutic and nutritional benefits. A power house of nutrition, benefiting immunity to good sleep. They have been acknowledged as a medicinal herb throughout the world.
Ayurveda describes Pumpkin to be balancing to all doshas. Pumpkin has a sweet and bitter taste which stimulates the blood to improve digestion. Containing natural oils, they are heavy or slow digesting to help reduce hunger.
Pumpkin seeds have an anti-microbial, anti-fungal and anti-viral properties. A balanced source of good proteins, they are nourishing and energizing. In addition to protein, they are an excellent source of iron, B vitamins, vitamin E, fiber, oil, and minerals. Pumpkin seeds are high in zinc, magnesium, phosphorus, zinc, copper, potassium, niacin, folic acid, riboflavin and thiamin. They also contain pantothenic acid, unsaturated oils and antioxidants.

The inner meat in the shell is called Pepitas. These make a great alternative in pesto, as a peanut butter or in dips.
To roast the seeds:
Scoop out and separate the seeds from the flesh (a Little flesh left on just adds flavor). Pat the seeds dry with a paper towel. Do not rinse them.
Spread the seeds on a cookie sheet and leave them out to dry at room temperature overnight.
Coat them with a little oil and salt or get creative with your spices.
Place the seeds in the oven and roast them at 350 until they are golden (20-25min), shaking them occasionally.
Remove the seeds from the oven and take them off the cookie sheet to end roasting.

Tips: To prevent the formation of mold during storage, ensure that the seeds are cool and dry before placing them in an airtight container.
Do not exceed recommended dosage; taken in excess this herb might produce adverse effects on liver function.
