Ayurveda describes Pumpkin to be balancing to all doshas. Pumpkin has a sweet and bitter taste which stimulates the blood to improve digestion. Containing natural oils, they are heavy or slow digesting to help reduce hunger.
Pumpkin seeds have an anti-microbial, anti-fungal and anti-viral properties. A balanced source of good proteins, they are nourishing and energizing. The inner meat in the shell is called Pepitas. These make a great alternative in pesto, as a peanut butter or in dips.
To roast the seeds:
Scoop out and separate the seeds from the flesh (a Little flesh left on just adds flavor). Pat the seeds dry with a paper towel. Do not rinse them.
Spread the seeds on a cookie sheet and leave them out to dry at room temperature overnight.
Coat them with a little oil and salt or get creative with your spices.
Place the seeds in the oven and roast them at 350 until they are golden (20-25min), shaking them occasionally.
Remove the seeds from the oven and take them off the cookie sheet to end roasting.
